1/2 cup Sweet Potato Pasta

1/2 cup tuna

1/4 large red onion

3 cloves garlic

1 tbsp olive oil

1 tbsp lime juice

Parsley and celery to taste

Optional – 1 cup spinach



  1. Sauté onions, garlic, parsley and celery with tuna in olive oil and lime juice.
  2. Add spinach if desired.
  3. Boil then drain sweet potato pasta.
  4. Mix pasta with sautéd tuna and spoon into casserole dish.
  5. Bake at 400 degrees for 10 mins.
