Ingredients:
2-3 Jack’s Paleo Kitchen Pumpkin Spice Cookies
1-2 apples
1 TBSP Binnie’s Very Vanilla Coconut Butter (or coconut oil)
1-2 TBSP maple syrup
1/2 TSP Cinnamon
1/4 TSP Ginger
1 scoop Cocoyo Coconut Yogurt

Directions:

  1. Preheat oven to 400 degrees.
  2. Place about 2 pumpkin spice cookies in the bottom of a small ramekin and mash down until cookies cover the bottom of the dish like a crust.
  3. Cut apples into 1-inch chunks (leave the skin on) and use them to fill the ramekin.
  4. Put one TBSP of coconut butter on top of the apples.
  5. Drizzle maple syrup on top, then sprinkle with cinnamon and ginger.
  6. Bake apples for 18-20 minutes, or until desired softness.
  7. Top with 1 spoonful of Cocoyo Coconut yogurt, sprinkle with cinnamon and additional cookie crumbs, and drizzle maple syrup to top it off!
