1/3 cup coconut syrup

2 tablespoons coconut sugar

1 cup water

10 ounces coconut water

8 mint leaves

juice of one lime

1 cup pineapple chunks

12+ ice cubes


  1. Blend the pineapple chunks, coconut sugar, and water in a blender to make pineapple simple syrup. Simmer over low heat for 30 minutes, stirring occasionally. Place in fridge until cooled.
  2. Blend together the pineapple simple syrup, coconut water, mint leaves, lime juice, and ice.
  3. Pour in a fun glass, garnish with pineapple wedges, and enjoy!
